Regular readers of this column will remember that one of my long-standing concerns with most commercial kitchen equipment is its inability to survive heavy cleaning sessions with pressure washers, hoses and the like.Too few manufacturers consider that to be enough of an issue to make changes in equipment to accommodate the types of cleaning methods used today. In one of my missives to a senior executive of one of the larger manufacturers, I begged him to go and observe what went on inside a commercial kitchen at 1 a.m. when it was time for the cleaners to do their job.

A diesel-powered, high-pressure air compressor is rated at 1,100 cfm and has a pressure range from 150 to 350 psi. The self-contained, 100% oil-free compressor has a "save all" base that eliminates fuel spills and oil leaks, making it one of the most environmentally friendly high-pressure units available. The diesel-driven engine stays well within the boundaries of the EPA and CARB emissions regulations. A complete line of accessories for the compressor is also available, ranging from aftercoolers to --40[degrees]F desiccant dryers and filters. Air compressor manufacturer, P.K. Lindsay, Deerfield, N.H., has been sold to American Eagle Accessories Group, Garner, la., a division of Stellar Industries Inc. The Lindsay air compressors are sold under the Lindsay and E.L. Smith brand names. All Lindsay compressor assets have been moved to American Eagle''s Garner plant and resumed full production. American Eagle is also a distributor of various truck-related accessories. According to the company, the FRL series of compressed air filters, regulators, lubricators, and manual control valves provides efficient moisture and contaminant removal, accurate pressure regulation, and precision lubrication for all air-operated equipment applications. All of the components in the series are available individually or in combination units. According to the company, its compressed-air productivity tools cut energy costs by as much as 70%, while reducing the compressor burden and shop noise levels. A 24-pg application manual shows bow these accessories provide solutions to spot chilling (to -40[degrees]F), dry machining, blow-off, control cooling, air conveying, static, liquid transfer, and spill pick-up. The products meet OSHA noise and dead-end pressure requirements. Welding shops require many types of equipment, including power supplies, guns, torches, wire feeders, flux-handling devices, and accessories such as cables and ground clamps, as well as consumables-filler metals, fluxes, and shielding gases. For brazing, shops employ furnaces and custom-built fixtures.

[FIGURE 8 OMITTED]To give the water team more breathing room, the 3T group suggested that the water team divide the official start of the test into two components: (1) the BWP and the reverse osmosis and (2) the reverse osmosis and the other two subsystems (AES and PPS). In the iWRS system, the pivotal subsystem is the reverse osmosis. This system receives BWP effluent, processes it, and provides product water for the two downstream systems. In effect, the BWP is independent of the downstream systems, so it could conceivably be started early when the downstream systems were still being built. Because of the modularity of 3T, the initial iWRS could consist of the first two subsystems, with the output going to drain while the inoculation proceeded, and the second iWRS could include all four subsystems. In this manner, the water team started the test with only the first two subsystems in April 2000 and brought the other two systems online in December 2000 in time to make a January 2001 full start.
